A cheaper grinder was the better buy

After a year with an expensive burr grinder I went back to a hand grinder for pour-over. The cup is no worse, the counter is emptier, and the two minutes of grinding have become the quiet part of the morning I look forward to.

Sourdough at a lower temperature

Summer kitchens run warm, so the starter peaks before I am awake. Moving the bulk ferment to the coolest shelf and cutting the starter to ten percent gave me back a schedule that fits a working week.
